Beer Can Chicken Recipe

1 Whole Chicken
1 Can of Beer
Olive Oil
For the Dry Rub……
1/3 Cup Brown Sugar
2 tblsp. Chili Powder
2 tblsp. Paprika
2 tsp. Dry Mustard
½ tsp. salt, pepper, garlic salt
Remove neck and giblets from chicken and discard. Rinse chicken inside and out, and pat dry with paper towels. Rub chicken lightly with oil then rub inside and out with dry rub. Set aside.
Open beer can and take several gulps (make them big gulps so that the can is half full). Place beer can in beer can chicken rack.(can be purchased in grill accessories section at Meijer). Grabbing a chicken leg in each hand, plunk the bird cavity over the beer can. Transfer the bird-on-a-can to your grill and place to the coolest part of the grill.
Cook the chicken over medium-high, indirect heat (i.e. no coals or burners on directly under the bird), with the grill cover on, for approximately 1 1/4 hours or until the internal temperature registers 165 degrees F in the breast area and 180 degrees F in the thigh, or until the thigh juice runs clear when stabbed with a sharp knife. Remove from grill and let rest for 10 minutes before carving.

Mackey Family Potato Salad

8 Red Potatoes
1 Dozen Eggs
½ Onion (chopped)
4-5 tblsp Miracle Whip
½ Cup Milk
White Sugar (to taste)
Peel and boil potatoes. Boil and peel eggs. Slice up potatoes and eggs when cool and add to large mixing bowl with onions.
Whisk Miracle Whip, milk, and sugar until creamy. Add to mixing bowl and mix all ingredients together. Garnish with chopped green onion and parsley if you wish.

Baked Beans

10 slices thick cut bacon
½ onion diced
½ green pepper diced
2 – 3 jalapenos seeded and diced
3 large cans (28oz.) pork and beans
¾ cup bbq sauce
½ cup brown sugar
¼ cup apple cider vinegar
2 tsp. dry mustard
Fry bacon in deep skillet until the fat is rendered. Remove bacon and drain on paper towels. Add onions and peppers to drippings in pan and saute until tender. Add beans and remaining ingredients and bring to a simmer. Pour beans and mixture into a 13 by 9 inch ovenproof pan. Top with bacon chunks and bake on the grill at 325 degrees about 2 hrs. Let stand to thicken slightly and serve.
